Beef & Broccoli Noodles

Time for dinner? This is the kind of dish that comes together really quickly for a delicious weeknight meal. Using minced (ground) beef means it’s cooked in no time, and the broccoli is quickly stir-fried through to add pops of bright colour. Udon noodles are the perfect accompaniment. A super-awesome dinner in 10 minutes max.

Ingredients

2 tbsp vegetable oil

5 garlic cloves

20g (0.7 oz) finely julienned ginger

400g (14 oz) beef mince

200g (7 oz) broccoli

4 tbsp oyster sauce

1 tbsp soy sauce

1 tsp dark soy sauce

1 tsp sugar

1 tsp sesame oil

600g (1.4 lb) cooked noodles (use any you like e.g. udon, hokkien or any other type of wheat noodle)

finely sliced spring onion, to serve (optional)

sesame seeds, to serve (optional)

Homemade Chilli Oil, to serve (optional)

Steps
  • Step 1

    Heat oil in a wok or large frying pan over medium heat. Add the garlic and ginger and stir-fry for 30 seconds until fragrant. Add the beef mince and stir-fry for about a minute. Add the broccoli and stir-fry until the beef is cooked and the broccoli is just tender. Add the oyster sauce, soy sauces and sugar. Stir-fry until well combined and the beef has soaked up most of the sauce. Turn the heat off and toss through the sesame oil.

  • Step 2

    Divide noodles among serving bowls. Top with the beef mixture. Sprinkle with spring onion, sesame seeds and spoon over the chilli oil, if using.

Best version yet

I have make this dish multiple times but this was the best one yet. Much more balanced flavors.
