My ultimate last minute Christmas menu

So time is a’tickin’, and the 25th is edging nearer and nearer. If you haven’t worked out what’s for eats on Chrissy day, then don’t worry – I have your back. Here’s my take on a no-fuss, last-minute menu of Christmas food that’s easy, epic and uses minimum ingredients.

If you’re planning on firing up the barbecue this Christmas like we do Down Under, then this recipe is definitely going to the top of your list. There are only four ingredients involved – and half of them are just for the garnish! Yep, my Honey Soy Butterflied Chicken is completely fuss-free. Ok, so you’ve got the charry chicken sitch going on. But what to pair it with? This: it’s my Epic Korean Potato Salad, full of crunchy cabbage, sweet apple and creamy potato. Just the freshness you need to cut through the savoury action. Oh, wait: did I mention there’s crispy bacon and hard-boiled eggs involved, too?

Sweet potato gives a mellow earthiness to this salad, and the pops of mint bring herbaceous freshness and zing to every mouthful. Paired with the tangy Vietnamese dressing and it’s a knockout side dish.

Is there anything more traditional than a Christmas ham (other than turkey, that is!)? My Sticky Chilli Ginger Ham version is fuss-free, thanks to my ready-made, all-natural marinade. Moreish, sweet and with a mild chilli kick, this festive essential will go down a treat.

Think potato salad is gluggy, bland and boring? Then think again, because this version is amazingly savoury, and the bacon takes it beyond basic. Honestly, this is one salad you’ll be craving year-round.

Creamy Roasted Potato & Bacon Salad with Miso Dressing

Want to know the three little words that send me weak at the knees? Three-ingredient recipe. This decadent, eat-with-your-hands Black Forest Ice-cream Sandwich uses only store-bought elements, so it couldn’t be easier to pull together when the sweet tooth starts tingling. What’s great is once you’ve mastered the method of this Christmas dessert, you can totally play around with each of the components to mix up the flavours. 

Trifles are a joyous spectacle come Christmas time and are a most-welcome retro comeback. And this one is strictly adults-only, thanks to a generous touch of spiced rum. Sorry, kids!
