Hosting a last-minute dinner party with friends? Then the big question is: what do you cook? We have you covered with a Thai banquet menu that only takes an hour to prep and cook. This menu is a wonderful fusion of spices and flavours, from a crispy salmon with a garlic and red chilli paste, to one of my absolute favourite chicken soups (this one is so easy, trust me), and a spicy laab with a difference. Because is it even a Thai banquet if you don’t have a laab on the table?

I adore this soup. There is something so comforting about the flavours and the textures. Creamy, coconutty yet still full of freshness, it’s a wonderful addition to any dinner party.

Thai Roasted Cauliflower Laab Salad

Tangy, spicy, fresh and fragrant… this vegie version of Thai laab salad is just so good. This also makes a great main dish for those friends who are vegetarian.

Thai three-flavoured salmon

There’s something so impressive about a side of salmon. There’s a few tips and tricks here to get the salmon skin really crispy. And the sauce! Oh my, don’t get me started. The flavour is full-on gorgeous.
