1 x Marion’s Kitchen Thai Sweet & Sour Wok Hit
2 tbsp vegetable oil
1 onion, sliced
400g thinly sliced chicken thighs
1 red capsicum, seeded and sliced
1 zucchini, sliced
100g pineapple chunks
½ cup sliced spring onion (scallions)
Heat the oil in a wok or large frying pan and toss in your onions. Let them brown for about half a minute. Now add the chicken and stir-fry until just cooked through.
Add the capsicum, zucchini and pineapple and stir-fry for about a minute. Now add that tasty THAI SWEET & SOUR WOK HIT and stir-fry until well combined. Remove from heat and toss through the spring onions. Serve immediately.
