500g (17 oz) plums in juice
1 cup sugar
½ cup white vinegar
1½ tbsp fish sauce
1 cinnamon stick
2 whole star anise.
Separate the plums and the juice. Carefully slice the plums in half and remove the stone from the centre.
Place ½ cup of the plum juice in a saucepan over high heat. Add the sugar, vinegar, fish sauce, cinnamon stick and star anise. Simmer for 4-5 minutes or until the sugar dissolves and the syrup has thickened slightly.
Pour the sauce into a bowl and allow to cool. Just before serving, pour the sauce over the plums and serve.
