4 blue swimmer crabs, cleaned and cut into pieces
2 tbsp vegetable oil
6 garlic cloves, finely chopped
1 tbsp finely chopped ginger
¼ cup oyster sauce
¼ cup soy sauce
1 tbsp sugar
¼ cup chicken stock
2 tbsp freshly ground black pepper
50g (1.7 oz) butter
4 spring onions, finely sliced
Grill the crab pieces over charcoal or regular barbecue (alternatively cook under a hot oven grill).
To make the sauce, heat the oil in a saucepan over medium heat. Add the garlic and ginger and cook for half a minute. Then add the oyster sauce, soy sauce, sugar and stock. Simmer for 10 minutes. Then stir through the pepper and butter.
Pour the sauce over the grilled crab and scatter over the spring onions.
