1 x Marion’s Kitchen Malaysian Satay Fresh Wrap Kit, which includes:
MALAYSIAN SATAY SAUCE
1 tbsp vegetable oil
1 onion, thinly sliced
500g (1lb) thinly sliced pork (fillet or pork belly are great)
1 red capsicum (bell pepper), seeded and sliced
4 cups finely sliced iceberg lettuce
8 corn or flour tortillas to serve
lime wedges to serve
Tomato & Avocado Salsa:
1 avocado, peeled and diced
4 tomatoes, diced
½ small red onion, finely diced
¼ cup finely chopped coriander (cilantro)
juice of 2 limes
For the tomato & avocado salsa, mix ingredients and set aside.
Heat oil in a frying pan over high heat. Stir-fry onion until brown at the edges. Add pork and stir-fry until almost cooked. Add capsicum and stir-fry for another minute. Pour in the MALAYSIAN SATAY SAUCE and stir-fry until just combined.
Divide lettuce among tortillas and top with pork mixture. Sprinkle with the CRISPY SHALLOTS. Serve with salsa and lime wedges.
