Chicken & Coconut Soup

serves 4

 7oz (207ml) Marion’s Kitchen Premium Coconut Milk

 4 cups chicken stock

 1/3 cup lime or lemon juice

 2 cups shredded cooked chicken

 100g button mushrooms, quartered

 2 lemongrass stalks, bruised

 2 tbsp fish sauce

 ½ tsp sugar

 1 long red chili, finely sliced

 2 tbsp finely chopped coriander (cilantro)

Place all the ingredients except the cilantro in a saucepan over medium-high heat.  Bring to a gentle simmer and cook for about 3 minutes. Remove from heat and divide among serving bowls. Top with cilantro and serve.
