I’ll take my cocktail in frozen form, please! These refreshing, citrussy and coconutty ice pops bring some fun to the festivities and are a great make-ahead option for a party.
8 x 200ml ice pop moulds
8 x popsicle sticks
300g (10.5 oz) frozen pineapple chunks
1 x 200ml bottle Fever-Tree Lime & Yuzu Soda
160ml (5.5 fl oz) coconut milk
40ml Grey Goose Vodka
zest of 1 lime
10 x fresh lemon verbena or makrut lime leaves
Place all of the ingredients for the soda pop into a smoothie blender. Blitz on high speed for 1 minute or until all of the ingredients are completely smooth.
Divide mixture between the ice-pop moulds then transfer to the freezer for 2 hours. After 2 hours, the mixture will be just set to insert wooden sticks into the centre. Return to the freezer for a further 6 hours.
