Coconut Caramel Sundae

serves 4

– 7oz (207ml) Marion’s Kitchen Premium Coconut Cream

– 2 cups brown sugar

– pinch of salt

– 4 chocolate chip cookies, lightly crushed

– 8 scoops of ice cream

– ¼ cup chopped pecans

– whipped cream & maraschino cherries to serve

Place brown sugar and 2 tbsp of water in a saucepan over medium heat. Cook until sugar dissolves, then stir in the coconut cream. Simmer for 2 minutes to thicken slightly.  Remove from heat and stir in the salt. Divide cookies and ice cream between serving bowls. Pour over warm coconut caramel. Top with pecans, whipped cream and cherries.
