2 cups finely shredded white cabbage
2 cups finely shredded purple cabbage
1 carrot, finely julienned
1 bunch mint
1 cup finely sliced spring onion (scallions)
¼ cup crispy fried shallots
4 tbsp apple cider or white wine vinegar
2 tbsp honey
2 tbsp sesame oil
3 tsp black sesame seeds
1 tsp sea salt
Whisk together dressing ingredients and set aside until ready to serve.
When ready to serve toss the cabbage, carrot, mint and spring onion with the dressing. Transfer to a serving bowl and sprinkle with crispy fried shallots.
