Ingredients

1 whole chicken

3 slices ginger

2 spring onions (scallions)

8 chicken stock cubes

¼ cup goji berries

1 cup Chinese Shaoxing wine

1 tbsp sugar

2 tsp sea salt

coriander (cilantro) leaves, to serve (optional)

Steps
  • Step 1

Portion the chicken into leg pieces and breast pieces (my video will show you how it’s done). Place the chicken carcass into a pot and add ginger, spring onion and chicken stock cubes, along with 8 cups of water. Place over high heat and cook for 20 minutes. Skim off the foam from the surface of the stock.

  • Step 2

Remove the carcass from the broth and discard. Then turn the heat to low and add the chicken pieces you portioned up, as well as the goji berries. Simmer gently for 10 minutes. Then turn the heat off, cover and allow the pieces to sit for 20 minutes to cook through using the residual heat.

  • Step 3

In the meantime, place the Shaoxing wine, sugar and salt in a bowl. Add 1 cup of the hot chicken broth and stir everything together. Set aside to allow the sugar to dissolve.

  • Step 4

Place ice cubes and cold water into a large bowl to create an ice bath. Once the chicken is done poaching, transfer it to the bowl of iced water and allow to cool.

  • Step 5

Use a cleaver to cut the chicken pieces into slices and place in a shallow bowl or serving dish (you could also shred the chicken meat if you don’t have a cleaver or heavy knife). Pour the Shaoxing wine mixture over the chicken, top with coriander leaves and serve.

What is drunken chicken?

If you’ve never had the pleasure of trying drunken chicken, you’re missing out! Drunken chicken is a Chinese dish that is super popular as part of a Chinese banquet. It’s normally served cold or at room temperature and makes for a super-refreshing appetiser. It consists of poached chicken that’s soaked in Shaoxing wine, which is accompanied by fruity pops of goji berries. It’s fresh, it’s delicate and it’s oh so delicious! This is one chicken dish you absolutely must try.

Why do they call it drunken chicken?

Drunken chicken is aptly named due to the soaking of the chicken in Shaoxing wine. Don’t fret though, this recipe is totally family friendly and the wine is purely used for flavour purposes!

Is there alcohol in drunken chicken?

While there is Shaoxing wine in drunken chicken, it’s not going to be enough to get you tipsy, AND it’s also perfectly safe for kids to enjoy! Drunken chicken has a very light flavour and is the perfect Chinese comfort food for the whole family to enjoy!

What is Shaoxing wine?

Shaoxing wine is a traditional Chinese cooking wine that is made by fermenting glutinous rice. It’s the secret ingredient in Chinese recipes that makes all your dishes taste just like they do at your fave Chinese restaurant. You should be able to find this wonder ingredient at your local Asian grocer, but if you’re struggling to track it down, dry sherry makes a good alternative. Drunken chicken is a dish that’s all about the Shaoxing wine, so it’s best to try to get your hands on it for the authentic (and the best) drunken chicken experience!
