Make your stir-fries, curries or rice even more egg-cellent thanks to this popular Thai staple. It’s the absolute crowning glory!
Crispy Fried Egg (Kai Dao)

Heat the vegetable oil in a wok (or a shallow pan for frying) over medium-high heat until it gives off a few wisps of smoke.

Once the oil is hot, crack an egg into the middle of the wok.

Use a spatula to baste the hot oil over the egg. Do this for 1-2minutes or until the egg forms a crispy golden edge (or until the yolk is cooked to your preferred liking).

Remove the egg from the wok. Drain on a cooling rack or paper towel and serve.

I remember my Derbyshire grandma cooking fried eggs in a similar way! Maybe not quite so much oil in what was a frying pan, but the result was very similar. Like Marion, I love a runny yolk to contrast with the crispy white.
