3 makrut lime leaves, lightly crushed
1 tbsp fish sauce
coriander (cilantro) leaves to serve

2 cups jasmine rice
1½ cups chicken stock
1 cup coconut milk
3 slices galangal
1 stalk lemongrass, bruised
½ tsp sea salt
