Char Siu Bacon, Eggs and Chilli Crisp Mayo

This char siu bacon, eggs and chilli crisp mayo takes the most important meal of the day and makes it the most delicious. Breakfast just got a whole lot more interesting.

6 rashers streaky bacon

2 tbsp char siu sauce*

4 poached eggs (check out my easy poached eggs recipe

4 slices sourdough, toasted

1 garlic clove, halved

1 small avocado, halved, sliced

2 small tomatoes, sliced

finely sliced spring onion (scallions), to serve

1 green chilli, finely sliced


Chilli crisp mayo

½ cup mayonnaise

2 tbsp Marion’s Kitchen Crispy Chilli Oil

  • Step 1

    Preheat the oven grill to medium-high.

  • Step 2

    Line a baking tray with foil. Place the bacon rashers on the tray and spoon half the char siu sauce over the rashers, spreading it out until the bacon is evenly coated. Flip the rashers over and spread the remaining char siu sauce on the other side. Place under the hot grill for 4-5 minutes, flipping halfway through, or until the bacon is slightly charred at the edges.

  • Step 3

    For the chilli crisp mayo, mix the ingredients together in a small bowl.

  • Step 4

    To serve, rub the cut side of the garlic clove over the warm toast, then spread with the chilli crisp mayo. Top with avocado and tomato slices, bacon rashers and poached eggs. Sprinkle over the spring onion and green chilli, then serve.

  • Notes

    – Char siu sauce is a sweet, spiced sauce often used to make Chinese barbecue pork. It can be found in the Asian section of many supermarkets or at any Asian grocery store.

    – If you can’t find my Crispy Chilli Oil where you live, try my homemade version instead.
