Marion’s Kitchen Thai massaman curry paste recipes

Our much-loved family recipe for Thai massaman was too good to keep to ourselves – so we popped it in a jar to spread serious joy to kitchens everywhere.

What is massaman curry paste made of?

Massaman curry paste, while a pinnacle of Thai cuisine,  is different from your typical Thai red, Thai Yellow and Thai green curries. Massaman curry paste contains a handful of herbs and spices alongside the typical curry paste ingredients. Massaman curry paste typically contains fish sauce, sugar, shallots, galangal, coriander seeds, lemongrass, cardamom, cinnamon, cumin, nutmeg and chilli giving the curry an ultra luxurious taste.

What do you eat with massaman curry?

Massaman curry already typically contains beef and potatoes so it’s already quite a hearty meal! Massaman curry is also usually served with steamed rice, and of course roti for dipping! You could also serve your massaman curry with Asian greens if you wanted to up your veggie intake.

How spicy is massaman curry?

Massaman curry is quite mild in heat. Massaman curry has less of an emphasis on the chilli flavours and more of an emphasis on spices typically used in Indian cuisine like cardamom and cumin.
