Nothing could be easier than this four-ingredient dessert, with its rich, comforting flavour. Coconut milk, sugar and bananas are all you need to make it in less than 15 minutes. Make it ahead and serve it warm or at room temperature.

BANANAS IN COCONUT MILK

Ingredients

2 cups coconut milk

½ cup water

½ cup white sugar

1 tsp sea salt

6 medium ripe bananas, peeled and cut into chunks*

Steps

Place all ingredients in a saucepan over medium heat. Bring to the boil then turn the heat down a little and simmer for 10 minutes or until bananas have softened slightly.

Serve warm or room temperature.

Notes:

– In Thailand we use a variety of banana called gluay nam wah. You could use lady finger bananas instead. Try to use bananas that are almost ripe but not too soft or overripe.
