Whether you’ve been a vegetarian for years or are just trying to incorporate more meat-free recipes into your diet, these dinner ideas are proof that plant-based can pack in the flavour too.

These sticky, sweet baby Dutch carrots are a side dish that deserve their time in the spotlight. Drizzled with Vietnamese-inspired tangy dressing, and topped with crunchy peanuts and a load of fresh chilli, why stop at just one serve?

In this recipe the humble eggplant gets a glow up… and boy, does it pack a punch! It leaves your mouth tingling from the Sichuan peppercorns (the numbing part) and your brow a little dampened by chilli-induced sweat (the hot part!).

Want some spice in your life? These Bombay sweet potatoes are the grown-up way to eat an entire bowl of ‘taters for dinner. They’re spicy, they’re sweet and you can even add rice if you’re up to it (you overachiever, you).

These are potatoes but all grown up. The ol’ faithful roast tater has been given a spicy Korean twist with the addition of gochujang.

If you love cheese, you’ll love this. It’s the ultimate mac and cheese. Say goodbye to that boxed stuff you’ve become so accustomed to, and prepare to fall in love. Serve it up, suss the cheese pull, and prepare yourself for seconds… and thirds.

This Japanese classic got a Marion Grasby vegetarian recipe twist! The addition of edamame and halloumi makes this an extra indulgent veggie meal for any time of day. Chuck it in your lunchbox if you’re dining al desko, and DON’T. FORGET. THE. KEWPIE!

This is one instant ramen recipe you’re going to want over and over again. It’s so easy, so lemon-y and ultra cheesy (use plant-based parm if you’re vegan!!). Best served standing in your kitchen in your PJs for the ultimate college-student nostalgia.

Vodka pasta took socials by storm during the early days of COVID lockdowns, and if you’re anything like us here at Marion’s Kitchen HQ you haven’t stopped thinking about it since. If you want to demolish an entire head of cauli in one sitting, may we suggest frying it? Korean fried cauliflower is spicy, crispy and downright delicious. You can eat it on its own or serve it with steamed rice for a meat-free meal.

If you’re tired of the same old pumpkin soup your mum’s been making since you were 12, give this a go. It’s your classic sweet, creamy butternut, but spiked with a huge hit of garlic and miso. Make sure to dip loads of crispy toast into this one.

Spinach and cheese, it’s an iconic combo. This palak paneer is everything spinach and cheese triangles WISH they were. It’s the creamy, cheesy curry of your dreams. Chock full of Indian spices, this one’s a winner.

Steamed buns are a wonderful thing. And these ones are made even better with the ginger-y, onion-y filling. Perfect for mopping up all the sauces.

Mashed potato… in a toastie? There’s truly nothing better. There’s veggies, there’s curry leaves and even a little bit of spice. This is Mumbai’s most famous street snack for a reason.
