Marion Grasby’s vegetarian recipes for perfect plant-based dinners

For when you want to make meat-free Monday, every day.

Hot & Numbing Sichuan Eggplant

Be-gone cardboard-esque veggie burgers, and bland, lifeless veg – Marion Grasby’s vegetarian recipes will have you falling head-over-heels for vegetables again! Here’s the recipe collection you need to bring an Asian element to your greens. Whether you’ve been a vegetarian for years or are just trying to incorporate more meat-free recipes into your diet, these dinner ideas are proof that plant-based can pack in the flavour too.

These sticky, sweet baby Dutch carrots are a side dish that deserve their time in the spotlight. Drizzled with Vietnamese-inspired tangy dressing, and topped with crunchy peanuts and a load of fresh chilli, why stop at just one serve?

In this recipe the humble eggplant gets a glow up… and boy, does it pack a punch! It leaves your mouth tingling from the Sichuan peppercorns (the numbing part) and your brow a little dampened by chilli-induced sweat (the hot part!).

Want some spice in your life? These Bombay sweet potatoes are the grown-up way to eat an entire bowl of ‘taters for dinner. They’re spicy, they’re sweet and you can even add rice if you’re up to it (you overachiever, you).

We’ve made an already easy meal even easier. This is for those nights where you need to eat something, but the stove is staying off. Fluffy rice, eggs, even a veggie or two – low effort, super good, you’re welcome.

If you ever feel like demolishing an entire plate of hashbrowns on a Saturday morning but your better judgment stops you, try these instead. Crispy, spicy, Sichuan potato pancakes… kinda like hash browns, but better. Load ‘em up with fried eggs and lashings of chilli oil and you’ve got yourself the breakfast of champions. Equally yum with coconut sriracha on top, just sayin’.

Fried rice for breakfast? Absolutely yes! If you’ve feasted on a load of takeaway the night before and all you’re left with is a measly tub of cooked rice, try this one on for size. Potatoes, peanuts, just the right amount of spice. Creamy, crunchy, any-time-of-day goodness.

Chilli. Garlic. Noodles. Need I say more? If you’re looking for some extra encouragement, you could have these on your dining table in just 10 minutes! Impress a date, your mates or your ‘rents with this ultra-low effort, meat-free pasta.

It’s store-bought gnocchi made so much better with delicious, creamy, cheesy, mushroomy goodness – trust.

If you’ve got rice, garlic and butter, you’ve got dinner. If you really can’t face the supermarket but you’re wanting something more fulfilling than a slice of toast, try this. It’s garlicky, buttery, eggy and totally tasty.

Absolutely everything tastes better in pastry, and these curry puffs are no exception. Think potatoes, peas, carrots, all curry-fied and scooped into melt-in-your-mouth homemade pastry. Drown them in sweet chilli sauce and you’ve got the ultimate vegetable appetiser.

Mint has major star power in this salad, coupled with roasted sweet potatoes and doused in Vietnamese-style tangy dressing. This is a side dish that speaks for itself.

This salad screams summer. And the addition of everyone’s favourite carb gives this salad an extra edge. It’s fresh, filling and covered in lime and coconut dressing – total winner.

Garlic bread just got better. The easiest bread recipe literally ever, smothered in cheese-y, miso-y goodness. Chuck it in the centre of the dinner table, pull apart and devour. It’s simple, delicious and looks ultra impressive – all good things, in other words!

These are potatoes but all grown up. The ol’ faithful roast tater has been given a spicy Korean twist with the addition of gochujang.

If you love cheese, you’ll love this. It’s the ultimate mac and cheese. Say goodbye to that boxed stuff you’ve become so accustomed to, and prepare to fall in love. Serve it up, suss the cheese pull, and prepare yourself for seconds… and thirds.

This Japanese classic got a Marion Grasby vegetarian recipe twist! The addition of edamame and halloumi makes this an extra indulgent veggie meal for any time of day. Chuck it in your lunchbox if you’re dining al desko, and DON’T. FORGET. THE. KEWPIE!

This is one instant ramen recipe you’re going to want over and over again. It’s so easy, so lemon-y and ultra cheesy (use plant-based parm if you’re vegan!!). Best served standing in your kitchen in your PJs for the ultimate college-student nostalgia.

Vodka pasta took socials by storm during the early days of COVID lockdowns, and if you’re anything like us here at Marion’s Kitchen HQ you haven’t stopped thinking about it since. We’ve added extra ingredients (obviously!) to really level up the vodka pasta you’re used to. Use vegan parm if you like and make sure your pants are unbuttoned before diving into this one.

Eggplant, but better. It’s crispy on the outside, soft on the inside and covered in a sweet, sticky sauce. It doesn’t get much better than this! Plus, they’re bite sized so feel free to eat 20 of the little suckers!

Pancakes for dinner? Done! This sweet potato okonomiyaki is the perfect savoury pancake that you’ll be dreaming about all night long. Extra saucy and packed full of veg, this one is equally as delicious the following day, so make extra – you won’t regret it.

A Chinese restaurant staple you can now make at home! This is the perfect bread if you’re after something flaky, crispy, and mouth-wateringly good. Serve it up with a spicy dipping sauce and you’re done.

If you want to demolish an entire head of cauli in one sitting, may we suggest frying it? Korean fried cauliflower is spicy, crispy and downright delicious. You can eat it on its own or serve it with steamed rice for a meat-free meal.

If you’re tired of the same old pumpkin soup your mum’s been making since you were 12, give this a go. It’s your classic sweet, creamy butternut, but spiked with a huge hit of garlic and miso. Make sure to dip loads of crispy toast into this one.

It’s fried rice, but with a top-secret Japanese ingredient. You’ll be making this one again and again and again.

Spicy, silky, miso-braised eggplant that melts in your mouth. It doesn’t get much better than that. If you’re wanting to impress with a low-effort side that’s big on flavour, this is your guy. Be warned – if you make this for a dinner party, you WILL have everyone asking for the recipe.

If you’re tired of the same old roasted veggies, you’re not alone. Cauliflower is one of those veggies that once roasted gets even more delicious somehow (don’t quote us on the science here). But this spicy, smoky roasted cauli is a total game-changer. Consider your socks knocked off.

Sick of the bland and boring veggie burgers from the supermarket? Yeah, same. These veggie burgs are anything but boring, thanks to bright beetroot, lentils and garam masala. The meat eaters at the BBQ will finally envy your plant-based burger for a change!

Pizza dough – she’s a fickle mistress. Thankfully, Marion’s perfected the perfect dough and the perfect veggie-forward toppings (thank us later). Super crusty, light base, topped with all the cheesy, mushroomy goodness you could ask for. Dinner = sorted.

If you’ve got a bunch of limp veg rattling around your crisper, you need to know about pakoras. These Indian-spiced, deep-fried delights are perfect with the herby green chutney. Great when faced with those what’s-for-dinner emergencies.

Spinach and cheese, it’s an iconic combo. This palak paneer is everything spinach and cheese triangles WISH they were. It’s the creamy, cheesy curry of your dreams. Chock full of Indian spices, this one’s a winner.

Steamed buns are a wonderful thing. And these ones are made even better with the ginger-y, onion-y filling. Perfect for mopping up all the sauces.

Mashed potato… in a toastie? There’s truly nothing better. There’s veggies, there’s curry leaves and even a little bit of spice. This is Mumbai’s most famous street snack for a reason.

This is pumpkin pasta, but not as you know it. This creamy, cheesy recipe is everything fusion pasta is known for and more. Chewy noodles, cheese and pumpkin-y goodness of a sauce… add this to your weekly dinner rotation.
